Ingredients

  • all-purpose flour – 4 cups / 500 g
  • warm water – 1 1/2 cups / 360 ml
  • dry yeast – 2 1/4 tsp / 7 g
  • sea salt – 1 tsp / 5 g
  • olive oil – 2 tbsp / 30 ml
  • sugar – 1 tsp / 5 g
  • sesame seeds – 1/4 cup / 36 g

Instructions

  1. In a small bowl, dissolve the yeast and sugar in the warm water. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the mixture until you obtain a smooth and elastic dough, about 10 minutes.
  4. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and allow it to rise for 1 hour or until doubled in size.
  5. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  6. Punch down the dough and roll it out into an oval shape, about 1/2 inch thick.
  7. Transfer the dough to the prepared baking sheet, cover, and let it rest for another 30 minutes.
  8. Brush the top with water and sprinkle generously with sesame seeds.
  9. Bake in the preheated oven for about 20-25 minutes, until golden brown.
  10. Allow the Lagana to cool on a wire rack before serving.
