Laban immo – Classic

Ingredients

  • Lamb shanks – 2 pieces / approx. 1.5 kg
  • Olive oil – 2 tbsp / 30 ml
  • Onion – 1 large, finely chopped
  • Garlic cloves – 4, minced
  • Yogurt – 4 cups / 960 g
  • Cornstarch – 2 tbsp / 16 g
  • Water – 1 cup / 240 ml
  • Cinnamon stick – 1
  • Bay leaves – 2
  • Salt – 1 tsp / 5 g
  • Black pepper – 1/2 tsp / 2.5 g

Instructions

  1. Heat olive oil in a large pot over medium heat. Add lamb shanks and sear until browned on all sides. Remove and set aside.
  2. In the same pot, add chopped onion and sauté until golden. Stir in minced garlic and cook for an additional minute.
  3. Return the lamb to the pot, pouring water over it, and add the cinnamon stick and bay leaves.
  4. Cover and simmer on low heat for about 1.5-2 hours, until the meat is tender.
  5. In a bowl, whisk yogurt with cornstarch until smooth. Gradually ladle some of the hot broth from the pot into the yogurt mixture to temper it.
  6. Slowly add the tempered yogurt into the pot, stirring continuously to prevent curdling. Continue to cook over low heat for about 20 minutes until the sauce thickens slightly.
  7. Season with salt and black pepper to taste. Serve hot with rice or flatbread.

Substitutions

  • Lamb shanks -> Beef shanks or chicken thighs
  • Yogurt -> Kefir or buttermilk (though they’ll alter the flavor)
