Ingredients

  • eggplants – 2 large / 600 g
  • zucchinis – 2 medium / 300 g
  • potatoes – 2 medium / 400 g
  • red bell peppers – 2 large / 250 g
  • olive oil – 1 cup / 240 ml
  • ripe tomatoes – 4 medium / 500 g
  • garlic cloves – 3 cloves
  • fresh parsley – a small bunch / 30 g
  • salt – to taste
  • black pepper – to taste
  • thick yogurt – 1 cup / 240 g

Instructions

  1. Slice the eggplants, zucchinis, and potatoes into 1 cm rounds. Deseed and slice the bell peppers into thick strips.
  2. Heat olive oil in a large frying pan over medium heat. Fry the vegetables in batches until golden brown, turning occasionally. Drain on paper towels to remove excess oil.
  3. Grate the tomatoes and mince the garlic. In a separate pan, heat 2 tablespoons of olive oil, add tomatoes and garlic, seasoning with salt and pepper. Simmer for 10 minutes until sauce thickens.
  4. Arrange the fried vegetables on a serving platter. Drizzle with tomato sauce and garnish with chopped parsley.
  5. Serve with a side of thick yogurt.
