Kyalagyosh is a traditional Armenian soup that blends the robustness of yogurt with the earthy undertones of crispy dried lavash, a staple flatbread in the region. Ingredients

  • yogurt – 4 cups / 960 g
  • dried lavash – 2 large sheets
  • onion – 1 large, finely chopped
  • butter – 3 tbsp / 45 g
  • salt – 1 tsp
  • dried mint – 1 tbsp
  • water – 2 cups / 480 ml

Instructions

  1. In a large saucepan, melt butter over medium heat. Add the chopped onions and sauté until golden brown, about 8 minutes.
  2. Add the dried mint to the onions and cook for another minute to release its aroma.
  3. In a separate large pot, combine the yogurt, water, and salt. Stir until smooth, then heat gently over low heat, stirring frequently to prevent curdling.
  4. Once the yogurt mixture is warm, break the dried lavash into smaller pieces and add it into the pot.
  5. Add the onion and mint mixture to the yogurt and lavash, stirring gently to combine.
  6. Continue to cook over low heat for 5-10 minutes, ensuring the lavash becomes soft yet maintains some texture. Serve immediately.
