Kutjevo-style Venison Medallions, or ‘Kutjevački Srneći Medaljoni,’ is a traditional Croatian dish hailing from the picturesque region of Kutjevo. Ingredients

  • venison medallions – 500 g / 1.1 lbs
  • olive oil – 3 tbsp / 45 ml
  • garlic, minced – 3 cloves
  • fresh rosemary, chopped – 1 tbsp / 3 g
  • dry red wine – 1 cup / 240 ml
  • salt – to taste
  • black pepper – to taste
  • butter – 2 tbsp / 28 g

Instructions

  1. Salt and pepper the venison medallions generously on both sides.
  2. In a large pan, heat olive oil over medium-high heat. Add garlic and rosemary, sautéing until fragrant, about 1 minute.
  3. Increase the heat and add the venison medallions, searing for 2-3 minutes on each side until browned.
  4. Pour the red wine into the pan, scraping any browned bits from the bottom of the pan. Reduce heat to low and let the medallions simmer in the wine for another 5 minutes.
  5. Remove the medallions from the pan and set aside. Increase the heat, adding butter to the sauce, and reduce until thickened.
  6. Serve the medallions drizzled with wine sauce.
