Kungullur is a delightful vegetarian dish originating from the diverse culinary traditions of Albania. Ingredients
- pumpkin – 1 kg / 2.2 lbs, peeled and cubed
- onion – 1 large, finely chopped
- olive oil – 3 tbsp / 45 ml
- garlic – 3 cloves, minced
- feta cheese – 200 g / 7 oz, crumbled
- fresh mint – 1/4 cup / 10 g, chopped
- fresh dill – 1/4 cup / 10 g, chopped
- salt – to taste
- black pepper – to taste
Instructions
- Preheat your oven to 200°C (390°F).
- In a large pan, heat olive oil over medium heat. Add chopped onions and cook until translucent, about 5 minutes.
- Add minced garlic, stirring for an additional 1 minute until fragrant.
- Add the cubed pumpkin to the pan, season with salt and pepper, and stir well. Cook for another 5 minutes.
- Transfer the mixture into a baking dish and spread it evenly.
- Top with crumbled feta cheese, fresh mint, and dill.
- Bake in the preheated oven for 30-35 minutes, until the pumpkin is tender and the cheese is golden.
- Serve warm as a main course or as a side.
