Kubbah Safarjalīyah is a traditional Syrian soup known for its unique blend of ingredients that produce a rich, tangy flavor. This soup, originating from the ancient culinary traditions of Syria, combines succulent meat-filled dumplings, known as kubbah, with a distinctive quince and pomegranate broth. The harmony of sweet and sour, combined with aromatic spices and tender meat, has made this soup a cherished staple in Syrian households, especially during festive gatherings.

Ingredients

  • Ground lamb – 500 g / 1.1 lbs
  • Fine bulgur – 200 g / 1 cup
  • Onion – 1 large, finely chopped
  • Allspice – 1 tsp
  • Chopped parsley – 1/4 cup
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp
  • Quinces – 2 medium, peeled and chopped
  • Pomegranate molasses – 100 ml / 1/2 cup
  • Beef broth – 1 liter / 4 cups
  • Olive oil – 2 tbsp
  • Pine nuts – 50 g / 1/4 cup, toasted
  • Cinnamon stick – 1

Instructions

  1. Soak the bulgur in water for 20 minutes, then drain and squeeze out excess water.
  2. In a bowl, mix the lamb, bulgur, chopped onion, allspice, parsley, salt, and black pepper. Knead until well combined.
  3. Shape the mixture into small oval-shaped dumplings.
  4. Heat olive oil in a large pot. Add quinces and sauté until slightly caramelized.
  5. Pour in the beef broth and bring to a simmer. Add the cinnamon stick and pomegranate molasses.
  6. Gently add the dumplings to the pot and simmer for 30 minutes.
  7. Serve hot, garnished with toasted pine nuts.
