Kubbah qrāṣ is a traditional Syrian meat dish renowned for its rich tapestry of flavors and textures. Originating from the culinary heart of Syria, this dish features minced meat encased in bulgur shells, delicately spiced and often deep-fried to a crispy perfection. It reflects the ingenuity of Syrian cuisine, marrying simple ingredients into an exquisite and indulgent meal.

Ingredients

  • bulgur – 2 cups / 320 g
  • minced beef or lamb – 1 pound / 450 g
  • onion – 1 large, finely chopped
  • cumin powder – 1 teaspoon / 2.6 g
  • cinnamon powder – 1/2 teaspoon / 1.3 g
  • allspice – 1/2 teaspoon / 1.1 g
  • salt – 1 teaspoon / 6 g
  • black pepper – 1/2 teaspoon / 1 g
  • pine nuts – 1/2 cup / 60 g
  • vegetable oil for frying – as needed

Instructions

  1. Wash the bulgur thoroughly and drain. Allow it to sit for 30 minutes to absorb excess water.
  2. In a skillet over medium heat, sauté the onions until translucent.
  3. Add the minced meat, cumin, cinnamon, allspice, salt, and black pepper to the skillet. Cook until the meat is browned and the spices are aromatic. Stir in the pine nuts and cook for an additional 2 minutes.
  4. In a large mixing bowl, combine the soaked bulgur with a pinch of salt and any residual moisture.
  5. Take small amounts of bulgur, form them into balls, then flatten them into discs. Place a spoonful of the meat mixture in the center, folding the bulgur around it to seal completely.
  6. In a deep pan, heat the oil until hot, and fry the kubbah until golden brown and crispy.
  7. Drain on paper towels and serve warm.

Substitutions

  • minced beef or lamb -> ground chicken or turkey
  • pine nuts -> chopped almonds
  • vegetable oil -> olive oil

Enhancements in the Next Evolution

  • Consider adding a handful of chopped fresh mint or parsley to the meat mixture for added freshness.
  • Experiment with baking instead of frying for a healthier alternative.
  • Incorporate a pinch of chili flakes for a bit of heat.
