Ingredients

  • beef chuck – 500 g / 1.1 lb
  • water – 2 liters / 8 cups
  • carrots – 200 g / 4 medium, diced
  • potatoes – 300 g / 4 medium, diced
  • yellow onion – 150 g / 1 large, chopped
  • leek – 100 g / 1 medium, sliced
  • celery root – 100 g / 1 small, diced
  • bay leaf – 1 leaf
  • allspice berries – 5 whole
  • salt – to taste
  • black pepper – to taste
  • fresh parsley – for garnish

Instructions

  1. 1. Rinse beef chuck and place it in a large pot with 2 liters of water. Bring to a boil, skimming off any foam that appears.
  2. 2. Add bay leaf and allspice berries. Reduce heat, cover, and let simmer for about 1.5 hours until the meat is tender.
  3. 3. Remove the beef from the pot, let it cool slightly, and cut into bite-sized pieces.
  4. 4. Add carrots, potatoes, onion, leek, and celery root to the broth. Simmer until the vegetables are tender, about 25 minutes.
  5. 5. Return the beef pieces into the pot. Season with salt and pepper to taste. Simmer for an additional 10 minutes.
  6. 6. Serve hot, garnished with fresh parsley.
