Ingredients
- bulgur wheat – 1 cup / 190 g
- hot water – 1.5 cups / 360 ml
- tomato paste – 3 tbsp / 50 g
- pomegranate molasses – 2 tbsp / 30 ml
- olive oil – 3 tbsp / 45 ml
- lemon juice – 2 tbsp / 30 ml
- spring onions – 4, chopped
- cucumber – 1 small, diced
- tomato – 1, diced
- parsley – 1 bunch, chopped
- mint leaves – 1/4 cup / 15 g, chopped
- salt – 1 tsp
- black pepper – 1/2 tsp
- red pepper flakes – 1/2 tsp
Instructions
- Rinse bulgur wheat under cold water and drain.
- Place bulgur in a large bowl, pour hot water over it, cover, and let it sit for 10 minutes.
- Fluff the bulgur with a fork, and stir in the tomato paste, pomegranate molasses, olive oil, and lemon juice until well combined.
- Mix in the chopped spring onions, cucumber, tomato, parsley, and mint.
- Season with salt, black pepper, and red pepper flakes to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
