Ingredients

  • bulgur wheat – 1 cup / 190 g
  • hot water – 1.5 cups / 360 ml
  • tomato paste – 3 tbsp / 50 g
  • pomegranate molasses – 2 tbsp / 30 ml
  • olive oil – 3 tbsp / 45 ml
  • lemon juice – 2 tbsp / 30 ml
  • spring onions – 4, chopped
  • cucumber – 1 small, diced
  • tomato – 1, diced
  • parsley – 1 bunch, chopped
  • mint leaves – 1/4 cup / 15 g, chopped
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • red pepper flakes – 1/2 tsp

Instructions

  1. Rinse bulgur wheat under cold water and drain.
  2. Place bulgur in a large bowl, pour hot water over it, cover, and let it sit for 10 minutes.
  3. Fluff the bulgur with a fork, and stir in the tomato paste, pomegranate molasses, olive oil, and lemon juice until well combined.
  4. Mix in the chopped spring onions, cucumber, tomato, parsley, and mint.
  5. Season with salt, black pepper, and red pepper flakes to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.
