Käsespätzle is Germany’s comforting answer to mac and cheese. Originating from the Swabian region, this dish marries hearty homemade spätzle—rustic egg noodles—with copious amounts of melted cheese and crispy onions on top. Traditional to German home kitchens, it showcases the simplicity of good ingredients and offers a culinary hug with its warm and deeply savory flavors.
Ingredients
- All-purpose flour – 2 cups / 240 g
- Salt – 1 tsp / 5 g
- Eggs – 4 large
- Milk – 1/2 cup / 120 ml
- Emmental cheese, grated – 2 cups / 200 g
- Butter – 2 tbsp / 28 g
- Onions, sliced – 2 medium
- Vegetable oil – 1 tbsp / 15 ml
- Chives, chopped – 2 tbsp / 8 g
Instructions
- In a large bowl, mix flour and salt. Make a well in the center and add eggs and milk. Stir to a smooth batter.
- Bring a large pot of salted water to a boil. Using a spätzle maker or colander, press the batter into the water.
- Boil for 2-3 minutes until noodles float to the surface. Remove with a slotted spoon and set aside.
- In a pan, heat butter and oil over medium heat. Add onions and sauté till golden brown, about 15 minutes.
- Preheat oven to 375°F (190°C). In a baking dish, layer spätzle and cheese, finishing with spätzle on top.
- Top with caramelized onions. Bake for 20 minutes until cheese is bubbly. Garnish with chives before serving.
