Krusevsko Grne is a traditional Macedonian casserole dish, which has roots deep in the culinary history of North Macedonia. Known for its hearty and comforting nature, this dish combines tender cuts of meat with earthy vegetables and rich spices baked to perfection in a clay pot or grne, as it’s called in Macedonian. This meal is a staple in Macedonian households, especially during the colder months, serving as both a warming comfort food and a festive centerpiece.

Ingredients

  • beef chuck – 1 lb / 450 g
  • potatoes – 2 large, diced
  • carrots – 2 medium, sliced
  • bell peppers – 1 large, chopped
  • onion – 1 large, chopped
  • garlic cloves – 4 cloves, minced
  • paprika – 2 tsp
  • black pepper – 1 tsp
  • salt – 2 tsp
  • olive oil – 3 tbsp
  • beef broth – 1 cup / 240 ml
  • tomato paste – 2 tbsp
  • bay leaf – 1 piece

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large clay pot or casserole dish, heat olive oil over medium heat.
  3. Add beef chuck and sear on all sides until browned.
  4. Remove beef and set aside. In the same pot, add onions and garlic, sauté until translucent.
  5. Add carrots, potatoes, bell peppers, paprika, black pepper, and salt. Stir well.
  6. Reintroduce the beef into the pot. Stir in tomato paste, beef broth, and bay leaf.
  7. Cover the pot and bake in the preheated oven for 2 hours, or until meat and vegetables are tender.
  8. Remove bay leaf before serving. Serve hot with crusty bread.
