Kozinjak, a quintessential sweet bread from North Macedonia, embodies the festive spirit and culinary tradition of the region. Traditionally prepared for Easter, this delicately sweet, enriched bread is known for its lightness and distinctive braided shape. The warm, comforting aroma of freshly baked Kozinjak is a staple in Macedonian households, symbolizing togetherness and celebration.

Ingredients

  • all-purpose flour – 4 cups / 480 g
  • milk – 1 cup / 240 ml
  • granulated sugar – 1/2 cup / 100 g
  • unsalted butter, softened – 1/2 cup / 113 g
  • eggs – 2 large
  • active dry yeast – 2 1/4 tsp / 7 g
  • vanilla extract – 1 tsp
  • salt – 1/2 tsp
  • lemon zest – 1 tsp
  • raisins – 1/2 cup / 75 g
  • egg wash (1 egg beaten with 1 tbsp water) – as needed

Instructions

  1. Warm the milk to about 110°F (43°C) and dissolve the yeast with a teaspoon of sugar. Let it sit until frothy, about 5-10 minutes.
  2. In a large bowl, mix flour, sugar, salt, and lemon zest. Make a well in the center and add the eggs, yeast mixture, milk, vanilla extract, and butter.
  3. Knead the dough until it is smooth and elastic, about 10 minutes. If using a stand mixer, use the dough hook attachment.
  4. Fold in the raisins into the dough until evenly distributed.
  5. Place the dough in an oiled bowl, cover, and let it rise in a warm place until doubled in size, about 1.5-2 hours.
  6. After rising, punch down the dough and divide it into three equal pieces. Roll each piece into a long rope and braid them together.
  7. Place the braided dough on a baking sheet lined with parchment paper. Cover and let it rise for another 45 minutes.
  8. Preheat your oven to 350°F (175°C). Brush the loaf with egg wash and bake for 30-35 minutes until golden brown and sounds hollow when tapped.
  9. Allow the bread to cool on a wire rack before slicing and serving.
