Ingredients

  • walu (escolar fish) – 1 lb / 450 g, cut into 1-inch cubes
  • coconut milk – 1 cup / 240 ml
  • lime juice – 1/4 cup / 60 ml
  • red onion – 1/2, thinly sliced
  • tomato – 1 medium, diced
  • fresh cilantro – 1/4 cup / 15 g, chopped
  • garlic – 2 cloves, minced
  • ginger – 1 tablespoon / 15 g, grated
  • green chili – 1, finely chopped
  • salt – to taste
  • black pepper – to taste

Instructions

  1. In a large bowl, combine the walu cubes with lime juice, and let it marinate for 10 minutes to ‘cook’ the fish slightly with the acidity.
  2. Drain the lime juice, and in a pan, heat coconut milk over medium heat.
  3. Add ginger and garlic to the coconut milk; cook for 2 minutes until fragrant.
  4. Stir in the red onion, tomato, and green chili; allow them to soften for 3-4 minutes.
  5. Add the marinated walu cubes to the pan, reduce the heat to low, and simmer for 8-10 minutes until the fish is cooked through.
  6. Season with salt and black pepper to taste.
  7. Garnish with fresh cilantro before serving.
