Kovatok Palov is a celebrated Uzbek rice dish that embodies the rich culinary traditions of Central Asia. Originating in Uzbekistan, this dish brings together fragrant rice, tender cuts of meat, aromatic spices, and earthy vegetables to create a symphony of flavors and textures. Typically served during family gatherings and special occasions, Kovatok Palov is more than just a meal—it’s a cultural experience that reflects the hospitality and warmth of the Uzbek people. Each ingredient tells the story of the region’s agricultural abundance, from the golden rice fields to the lush gardens of fresh vegetables, underpinned by the robust flavors of cumin and coriander.

Ingredients

  • long-grain rice – 2 cups / 400 g
  • lamb shoulder – 1 lb / 450 g, cubed
  • carrots – 3 medium, julienned
  • onion – 1 large, finely chopped
  • garlic – 4 cloves, minced
  • vegetable oil – 1/4 cup / 60 ml
  • cumin seeds – 1 tsp
  • ground coriander – 1 tsp
  • salt – to taste
  • black pepper – 1/2 tsp
  • water – 3 cups / 720 ml
  • raisins – 1/4 cup / 40 g

Instructions

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat vegetable oil over medium heat. Add lamb cubes and brown them on all sides, about 5-7 minutes.
  3. Add onions to the pot and sauté until they become translucent.
  4. Stir in the carrots and garlic, cooking for another 3-4 minutes.
  5. Mix in cumin seeds, ground coriander, salt, and pepper. Cook for 1-2 minutes until the spices become fragrant.
  6. Drain the rice and add it to the pot, stirring well to coat with the oil and spices.
  7. Pour in 3 cups of water, making sure the water covers the rice by about half an inch. Stir in the raisins.
  8. Bring to a boil, reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and water is absorbed.
  9. Turn off heat and let it sit, covered, for an additional 10 minutes before serving.
