Ingredients

  • Cauliflower – 1 large head / 750 g
  • Olive oil – 1/4 cup / 60 ml

  • Tomato paste – 2 tablespoons / 30 g
  • Crushed tomatoes – 1 can / 400 g
  • Bay leaf – 1
  • Cinnamon stick – 1
  • Water – 1 cup / 240 ml
  • Salt – to taste
  • Black pepper – to taste
  • Fresh parsley – 3 tablespoons, chopped

Instructions

  1. Cut the cauliflower into florets and wash thoroughly.
  2. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until translucent.
  3. Stir in the tomato paste and cook for 1 minute.
  4. Add the crushed tomatoes, bay leaf, cinnamon stick, water, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a simmer, then add the cauliflower florets.
  6. Cover and cook on low heat for about 30-40 minutes until the cauliflower is tender and the sauce has thickened.
  7. Remove the bay leaf and cinnamon stick before serving.
  8. Garnish with fresh parsley before serving.
