Kotlovina is a traditional Croatian meat dish that hails from the region of Zagreb and its surrounding areas. Ingredients

  • pork shoulder – 2 lbs / 900 g
  • pork sausages – 1 lb / 450 g
  • red bell peppers – 2 large / 300 g
  • onions – 2 large / 300 g
  • garlic cloves – 4 cloves / 20 g
  • vegetable oil – 2 tablespoons / 30 ml
  • white wine – 1 cup / 240 ml
  • paprika – 1 tablespoon / 15 g
  • crushed red pepper – 1 teaspoon / 5 g
  • salt – to taste
  • black pepper – to taste
  • fresh parsley – for garnish

Instructions

  1. Slice the pork shoulder into 1-inch thick pieces. Season with salt, black pepper, and paprika.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add the pork shoulder pieces and sear both sides until brown. Remove and set aside.
  4. In the same skillet, add sliced onions. Sauté until they become translucent.
  5. Add minced garlic and sliced red bell peppers, cook until peppers soften.
  6. Return pork to the skillet, add the sausages, then pour in white wine.
  7. Sprinkle crushed red pepper over the top.
  8. Cover the skillet and let it simmer for 45 minutes on low heat, until the meat is tender.
  9. Garnish with freshly chopped parsley before serving.
