- plain yogurt – 1 cup / 240 mL
- cashew nuts – 1/4 cup / 40 g
- ghee – 2 tablespoons / 30 mL
- onions, thinly sliced – 2 large / 300 g
- garlic cloves, minced – 4 cloves / 15 g
- ginger, minced – 1 tablespoon / 15 g
- cinnamon stick – 1 stick / 5 cm piece
- green cardamom pods – 4 pods
- cloves – 4
- coriander powder – 1 tablespoon / 15 g
- cumin powder – 1 teaspoon / 5 g
- salt – to taste
- bay leaf – 1
- water – 1 cup / 240 mL
Instructions
- Blend the cashew nuts with a little water to form a smooth paste.
- Heat ghee in a large pot over medium heat, add sliced onions and fry until golden brown.
- Stir in minced garlic and ginger, sautéing until aromatic.
- Add cinnamon stick, cardamom pods, cloves, and bay leaf, frying for another minute.
- Incorporate the chicken pieces, browning them slightly before adding coriander powder, cumin powder, and salt.
- Mix in the cashew paste and yogurt carefully to avoid curdling.
- Add a cup of water, bring to a gentle simmer, and cover the pot. Cook for 25-30 minutes until the chicken is tender.
- Serve hot garnished with fresh coriander.
