- vegetable broth – 4 cups / 960 ml
- paprika – 1 tsp / 5 g
- olive oil – 2 tbsp / 30 ml
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 2.5 g
- parsley – 1 small bunch / 30 g, chopped
Instructions
- Peel and cube the potatoes into bite-sized pieces.
- Chop the onion, carrots, and bell pepper into small chunks.
- Heat olive oil in a large pot over medium heat and sauté the onion until translucent.
- Add the carrots and bell pepper, sautéing until they slightly soften.
- Stir in the tomato paste and paprika, cooking for another minute to develop flavors.
- Add the cubed potatoes to the pot, stirring to coat with the vegetables and spices.
- Pour in the vegetable broth, bringing the mixture to a simmer.
- Season with salt and black pepper, cooking until the potatoes are soft, about 30 minutes.
- Garnish with chopped parsley before serving.
