Kolo Mee is a beloved Malaysian noodle dish originating from the state of Sarawak. Comfortingly hearty and savory, it features springy egg noodles tossed in fragrant sauces and topped with slices of char siu (barbecued pork), minced pork, and a sprinkle of spring onions. This dish is known for its simplicity in preparation yet complex, delightful flavors which resonate with Malaysian culinary traditions.

Ingredients

  • egg noodles – 400 g / 14 oz
  • char siu (barbecued pork) – 200 g / 7 oz, sliced
  • minced pork – 200 g / 7 oz
  • light soy sauce – 4 tbsp
  • dark soy sauce – 1 tsp
  • sesame oil – 2 tbsp
  • fried shallots – 4 tbsp
  • chicken stock – 1 cup / 240 ml
  • spring onions – 4, finely sliced
  • white pepper – 1/2 tsp
  • garlic – 2 cloves, minced

Instructions

  1. In a pan, heat a little oil and sauté the minced garlic until fragrant. Add the minced pork and cook until browned. Set aside.
  2. Bring a pot of water to a boil and cook the egg noodles until just tender. Drain and rinse under cold water to stop the cooking process.
  3. In a large bowl, combine light soy sauce, dark soy sauce, sesame oil, and chicken stock.
  4. Toss the noodles in the sauce mix until well coated.
  5. Divide the noodles into bowls and top with char siu slices, cooked minced pork, fried shallots, and spring onions.
  6. Sprinkle with white pepper before serving for a slight kick.

  • char siu (barbecued pork) -> grilled chicken or any barbecued meats
  • egg noodles -> wheat noodles or rice noodles
  • light soy sauce -> tamari for a gluten-free option
