Ingredients

  • white fish fillets – 500 g / 1.1 lbs
  • long-grain white rice – 2 cups / 400 g

  • water – 2 cups / 480 ml
  • onion, chopped – 1 medium / 150 g
  • garlic cloves, minced – 3 cloves
  • ginger, grated – 2 tsp / 10 g
  • scallions, sliced – 2
  • lime juice – 2 tbsp / 30 ml
  • vegetable oil – 2 tbsp / 30 ml
  • salt – to taste
  • black pepper – to taste
  • fresh coriander, chopped – for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear. Set aside.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, sautéing until the onion becomes translucent.
  3. Add the fish fillets and cook for 3-5 minutes on each side until lightly browned.
  4. Pour in the coconut milk, water, and lime juice. Stir to combine, bringing the mixture to a simmer.
  5. Gently add the rice to the pot, ensuring it is submerged in the liquid. Cover the pot with a lid and reduce the heat to low.
  6. Cook for about 15-18 minutes or until the rice is tender and the liquid is absorbed.
  7. Season with salt and pepper to taste. Garnish with sliced scallions and chopped fresh coriander before serving.
