Ingredients

  • beef chuck – 2 lbs / 900 g
  • olive oil – 1/4 cup / 60 ml
  • large onions – 2, finely chopped
  • garlic cloves – 4, minced
  • red wine – 1 cup / 240 ml
  • tomato paste – 2 tbsp / 30 g
  • canned tomatoes – 14 oz / 400 g
  • cinnamon stick – 1
  • bay leaves – 2
  • allspice berries – 3
  • salt – to taste
  • black pepper – to taste
  • water – 2 cups / 480 ml
  • kalamata olives – 1/2 cup / 75 g, pitted

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef chuck in batches, ensuring a nice crust. Remove and set aside.
  3. In the same pot, add onions and garlic; sauté until translucent.
  4. Deglaze the pot with red wine, scraping up browned bits for flavor.
  5. Stir in tomato paste, then add canned tomatoes, cinnamon stick, bay leaves, allspice berries, salt, and pepper.
  6. Return beef to the pot. Add water and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 2 hours or until the beef is tender.
  8. Add kalamata olives, uncover, and simmer for another 10 minutes to blend flavors.
