Kofta challow – Classic

Kofta Challow is a traditional Afghan dish renowned for its flavor-packed meatballs (Kofta) paired with fragrant basmati rice (Challow). Ingredients

  • ground beef – 1 lb / 450 g
  • onion – 1 large, finely chopped
  • garlic – 3 cloves, minced
  • fresh coriander – 1/4 cup / 15 g, chopped
  • ground coriander – 1 tsp
  • ground cumin – 1 tsp
  • turmeric – 1/2 tsp
  • cinnamon – 1/4 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • egg – 1, beaten
  • oil – 2 tbsp
  • basmati rice – 2 cups / 370 g
  • water – 4 cups / 960 ml
  • butter – 2 tbsp
  • saffron threads – a pinch, soaked in 2 tbsp warm milk

Instructions

  1. In a bowl, mix ground beef with onion, garlic, fresh coriander, ground coriander, ground cumin, turmeric, cinnamon, salt, black pepper, and beaten egg until well combined.
  2. Shape the mixture into small, firm meatballs.
  3. Heat oil in a large skillet over medium heat and brown the meatballs on all sides. Remove from skillet and set aside.
  4. Rinse basmati rice under cold water until the water runs clear.
  5. In a large pot, bring water to a boil, add rinsed rice, and cook for 7-8 minutes until partially cooked. Drain rice in a colander.
  6. Melt butter in the same pot, return rice, drizzle the saffron milk on top, and cook covered on low heat for 20-25 minutes until fully cooked and fluffy.
  7. Add the meatballs to the rice and gently mix before serving.
