Kofta Challow is a traditional Afghan dish renowned for its flavor-packed meatballs (Kofta) paired with fragrant basmati rice (Challow). Ingredients
- ground beef – 1 lb / 450 g
- onion – 1 large, finely chopped
- garlic – 3 cloves, minced
- fresh coriander – 1/4 cup / 15 g, chopped
- ground coriander – 1 tsp
- ground cumin – 1 tsp
- turmeric – 1/2 tsp
- cinnamon – 1/4 tsp
- salt – 1 tsp
- black pepper – 1/2 tsp
- egg – 1, beaten
- oil – 2 tbsp
- basmati rice – 2 cups / 370 g
- water – 4 cups / 960 ml
- butter – 2 tbsp
- saffron threads – a pinch, soaked in 2 tbsp warm milk
Instructions
- In a bowl, mix ground beef with onion, garlic, fresh coriander, ground coriander, ground cumin, turmeric, cinnamon, salt, black pepper, and beaten egg until well combined.
- Shape the mixture into small, firm meatballs.
- Heat oil in a large skillet over medium heat and brown the meatballs on all sides. Remove from skillet and set aside.
- Rinse basmati rice under cold water until the water runs clear.
- In a large pot, bring water to a boil, add rinsed rice, and cook for 7-8 minutes until partially cooked. Drain rice in a colander.
- Melt butter in the same pot, return rice, drizzle the saffron milk on top, and cook covered on low heat for 20-25 minutes until fully cooked and fluffy.
- Add the meatballs to the rice and gently mix before serving.
