Ingredients
- Olive oil – 3 tbsp / 45 ml
- Onion, finely chopped – 1 medium / 150 g
- Garlic cloves, minced – 2 cloves / 10 g
- Bell peppers, assorted colors, chopped – 2 large / 250 g
- Zucchini, sliced – 2 medium / 300 g
- Tomatoes, chopped – 4 medium / 400 g
- Feta cheese, crumbled – 150 g / 5 oz
- Oregano, dried – 1 tsp / 1 g
- Salt – to taste
- Black pepper – to taste
- Basil leaves, fresh, torn – 1/4 cup / 10 g
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the chopped onion and minced garlic, sauté until onions are translucent.
- Add the bell peppers and zucchini, cooking until softened, about 5-7 minutes.
- Stir in the chopped tomatoes and cook until they start breaking down, about 5 minutes.
- Season with salt, black pepper, and dried oregano.
- Reduce heat to low, crumble feta cheese over the top, cover, and let simmer until the cheese is warmed, about 3 minutes.
- Garnish with fresh basil leaves and serve warm.
