Ingredients

  • Somyeon (thin wheat noodles) – 8 oz / 225 g
  • Kimchi – 1 cup / 150 g, chopped
  • Kimchi juice – 1/2 cup / 120 ml
  • Cold beef broth – 4 cups / 960 ml
  • Cucumber – 1 cup / 100 g, julienned
  • Carrot – 1 cup / 100 g, julienned
  • Green onions – 2 tablespoons / 15 g, chopped
  • Sesame seeds – 2 teaspoons / 8 g
  • Sugar – 1 tablespoon / 12 g
  • Soy sauce – 1 tablespoon / 15 ml
  • Sesame oil – 1 tablespoon / 15 ml

Instructions

  1. Cook the somyeon noodles according to package instructions. Rinse in cold water and drain well.
  2. In a large mixing bowl, combine the cold beef broth, kimchi juice, sugar, soy sauce, and sesame oil. Stir well to combine the flavors evenly.
  3. Add the chopped kimchi, cucumber, and carrot to the broth mixture. Mix to ensure all ingredients are well incorporated.
  4. Divide the cooked noodles into serving bowls and pour the kimchi-broth mixture over each bowl.
  5. Garnish with chopped green onions and sprinkle sesame seeds on top. Serve immediately.
