Ingredients

  • fine bulgur wheat – 1 cup / 150 g
  • lean lamb, ground – 1 lb / 450 g
  • onion, finely chopped – 1 medium / 150 g
  • olive oil – 1/4 cup / 60 ml
  • cayenne pepper – 1/2 tsp / 1.5 g
  • allspice – 1 tsp / 2 g
  • salt – 1 tsp / 6 g
  • black pepper – 1/2 tsp / 1 g
  • fresh mint leaves, chopped – 1/4 cup / 10 g
  • fresh parsley, chopped – 1/4 cup / 15 g
  • lemon wedges – for serving

Instructions

  1. Rinse the bulgur wheat under cold water and let it soak for 10 minutes. Drain and squeeze out excess moisture.
  2. In a large mixing bowl, combine the ground lamb, soaked bulgur, chopped onion, olive oil, cayenne pepper, allspice, salt, and black pepper.
  3. Mix thoroughly using your hands until the mixture is well-combined and smooth.
  4. Transfer the mixture onto a serving platter and shape it into a flat circle or oval.
  5. Garnish with chopped mint and parsley.
  6. Serve immediately with lemon wedges on the side.
