Ingredients

- Active dry yeast – 2 1/4 tsp / 7 g
- Salt – 1 1/2 tsp / 9 g
- Sugar – 1 tsp / 4 g
- Olive oil – 2 tbsp / 30 ml
Instructions
- In a small bowl, dissolve sugar in warm water and add yeast. Allow it to sit for about 10 minutes or until it becomes frothy.
- In a large mixing bowl, combine flour and salt.
- Create a well in the center of the flour mixture, then add the yeast mixture and olive oil.
- Use a spoon to initially combine, then knead with hands for about 10 minutes, until a smooth, elastic dough forms.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
- Preheat a grill or stovetop to high heat, preparing an area with hot coals or embers for cooking the bread.
- Once risen, punch down the dough and divide it into 4-6 equal portions.
- Roll each portion into a thin circle, about 1/4 inch thick.
- Grill each dough circle over hot embers for about 2-3 minutes on each side, until puffed and slightly charred.
- Serve warm with olive oil and za’atar, or alongside your favorite Middle Eastern dishes.
