Khoresh Kangar is a traditional Iranian stew renowned for its rich flavors and the distinct taste of wild angelica or ‘kangar.’ This dish is a delightful representation of Persian culinary artistry, combining aromatic herbs with succulent lamb and a unique blend of spices. Ingredients
- lamb shoulder, cubed – 1 kg / 2.2 lbs
- onion, finely chopped – 2 large / 300 g
- garlic, minced – 4 cloves
- dried wild angelica (kangar) – 200 g / 7 oz
- turmeric powder – 2 teaspoons
- ground cumin – 1 teaspoon
- cinnamon stick – 1 piece
- salt – to taste
- black pepper – to taste
- dried lime – 2 pieces
- vegetable oil – 4 tablespoons
- water – 4 cups / 960 ml
- saffron strands – a pinch, soaked in 2 tablespoons warm water
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.
- Add minced garlic and continue to sauté for 2 minutes until fragrant.
- Stir in the turmeric and cumin, and cook for an additional minute.
- Add cubed lamb to the pot and brown on all sides.
- Pour in the water and add the cinnamon stick. Allow the stew to simmer gently for about 1.5 hours or until the lamb is tender.
- Remove dried limes’ stem, pierce them with a fork, and add to the pot along with the dried wild angelica.
- Season the stew with salt and black pepper. Simmer for another 30 minutes, allowing the flavors to meld.
- Just before serving, stir in the saffron water. Serve hot with steamed basmati rice.
