Khoresh Kangar is a traditional Iranian stew renowned for its rich flavors and the distinct taste of wild angelica or ‘kangar.’ This dish is a delightful representation of Persian culinary artistry, combining aromatic herbs with succulent lamb and a unique blend of spices. Originating from the rich tapestry of Iranian cuisine, Khoresh Kangar offers a glimpse into the cultural and historical influences that have shaped the region’s gastronomic practices.

Ingredients

  • lamb shoulder, cubed – 1 kg / 2.2 lbs
  • onion, finely chopped – 2 large / 300 g
  • garlic, minced – 4 cloves
  • dried wild angelica (kangar) – 200 g / 7 oz
  • turmeric powder – 2 teaspoons
  • ground cumin – 1 teaspoon
  • cinnamon stick – 1 piece
  • salt – to taste
  • black pepper – to taste
  • dried lime – 2 pieces
  • vegetable oil – 4 tablespoons
  • water – 4 cups / 960 ml
  • saffron strands – a pinch, soaked in 2 tablespoons warm water

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.
  2. Add minced garlic and continue to sauté for 2 minutes until fragrant.
  3. Stir in the turmeric and cumin, and cook for an additional minute.
  4. Add cubed lamb to the pot and brown on all sides.
  5. Pour in the water and add the cinnamon stick. Allow the stew to simmer gently for about 1.5 hours or until the lamb is tender.
  6. Remove dried limes’ stem, pierce them with a fork, and add to the pot along with the dried wild angelica.
  7. Season the stew with salt and black pepper. Simmer for another 30 minutes, allowing the flavors to meld.
  8. Just before serving, stir in the saffron water. Serve hot with steamed basmati rice.

Substitutions

  • lamb shoulder -> beef chuck
  • dried wild angelica (kangar) -> spinach
  • dried lime -> lime zest and a squeeze of fresh lime
