Ingredients
- lamb (cubed) – 1 lb / 450 g
- yellow split peas – 1 cup / 190 g
- onion (chopped) – 1 large / 200 g
- tomato paste – 2 tbsp / 30 g
- dried lime – 3 pieces
- vegetable oil – 4 tbsp / 60 mL
- turmeric – 1 tsp / 2 g
- ground cinnamon – 1/2 tsp / 1 g
- salt – to taste
- black pepper – 1/2 tsp / 1 g
- water – 5 cups / 1.2 L
- potatoes (thinly sliced for fries) – 2 medium / 300 g
- saffron (optional) – a pinch
Instructions
- In a large pot, heat 2 tbsp of vegetable oil over medium heat. Add chopped onions and sauté until golden.
- Add turmeric and cubed lamb, searing the meat until browned on all sides.
- Stir in tomato paste, cooking for an additional 2 minutes.
- Add split peas, dried limes, cinnamon, salt, and black pepper. Pour in water and bring to a boil.
- Lower the heat, cover, and let simmer for approximately 1.5 hours, or until meat and split peas are tender.
- Meanwhile, in another pan, heat 2 tbsp of oil and fry sliced potatoes until crispy. Drain on paper towels.
- Before serving, adjust the seasoning and gently crush the dried limes for extra flavor.
- Serve the khoresh hot, topped with fries, alongside steamed basmati rice, optionally infused with saffron.
