Ingredients

  • Beef or lamb – 500 g / 1.1 lbs
  • Yellow onions – 2 large, thinly sliced
  • Vegetable oil – 3 tablespoons
  • Turmeric powder – 1 teaspoon
  • Dried plums (prunes or dried apricots can be used) – 200 g / 7 oz
  • Tomato paste – 2 tablespoons
  • Water – 2 cups / 480 ml
  • Salt – to taste
  • Black pepper – 1 teaspoon
  • Saffron threads (optional) – a pinch, bloomed in 2 tablespoons hot water
  • Cinnamon stick – 1 small

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the sliced onions and sauté until golden brown.
  2. Add the turmeric and stir for another minute to release its aroma.
  3. Add the meat and brown it on all sides.
  4. Stir in the tomato paste and let it cook for a couple of minutes until it starts to caramelize.
  5. Add water, salt, and pepper, bring to simmer, cover the pot, and let it cook on low heat for about 1 hour or until the meat is tender.
  6. Add the dried plums, saffron water (if using), and cinnamon stick. Let it cook for another 30 minutes until the stew thickens and all flavors are well combined.
  7. Adjust seasoning with more salt and pepper if needed.
  8. Serve hot with steamed rice.
