Khlea is a traditional Moroccan delicacy revered for its rich, savory flavors and long-lasting preservation. A quintessential centerpiece in Moroccan cuisine, Khlea is essentially cured and confit beef or lamb, enriched with a blend of aromatic spices, including cumin, coriander, and garlic. This prized dish is believed to have originated from the nomadic Berbers, who developed this method of preserving meat to sustain through long journeys across the harsh Saharan landscape. The exquisite taste of Khlea has been a staple in Moroccan homes, often paired with eggs for breakfast or served with couscous.

Ingredients

  • beef (or lamb) – 2 lbs / 900 g
  • salt – 1/4 cup / 60 g
  • ground cumin – 2 tsp / 4 g
  • ground coriander – 2 tsp / 4 g
  • ground black pepper – 1 tsp / 2 g
  • cayenne pepper – 1/2 tsp / 1 g
  • garlic cloves, minced – 4 cloves / 20 g
  • smoked paprika – 1 tsp / 2 g
  • olive oil – 1/2 cup / 120 ml
  • bay leaves – 2 leaves
  • thyme – 1 tsp / 1 g

Instructions

  1. Cut the beef (or lamb) into 1-inch cubes and place in a large bowl.
  2. Add the salt, ground cumin, ground coriander, black pepper, cayenne pepper, and minced garlic to the bowl. Mix well to ensure the meat is evenly coated with the spices.
  3. Cover the bowl and let it marinate in the refrigerator overnight, or at least for 12 hours.
  4. Preheat the oven to 120°C (250°F).
  5. Transfer the marinated meat into an ovenproof dish or heavy pot.
  6. Pour olive oil over the meat until completely submerged, then add the bay leaves and thyme.
  7. Cover the dish and bake in the preheated oven for 2-3 hours until the meat is tender and deeply infused with the flavors.
  8. Remove from the oven and allow to cool to room temperature before storing in the refrigerator.

  • smoked paprika -> regular paprika
