Ingredients
- eggplants – 2 large / 500 g
- garlic – 4 cloves, minced
- olive oil – 4 tbsp / 60 ml
- white vinegar – 2 tbsp / 30 ml
- fresh dill – 1 bunch, chopped
- green bell pepper – 1 medium, diced
- ground black pepper – 1/2 tsp / 1 g
- salt – 1 tsp / 5 g
Instructions
- Preheat the oven to 200°C (390°F).
- Slice the eggplants into 1 cm thick rounds, place on a baking sheet.
- Brush eggplant slices with olive oil, season with salt and ground black pepper.
- Roast in the oven for 20-25 minutes until nicely browned.
- In a bowl, combine minced garlic, white vinegar, and chopped dill.
- Add diced green bell pepper to the garlic-dill mixture and mix well.
- Once the eggplants are roasted, layer them in a serving dish.
- Drizzle the garlic-dill-bell pepper mixture over the top.
- Allow the flavors to meld for at least 15 minutes before serving.
