Khao Mok Gai is a traditional Thai rice dish that marries the fragrant spices of turmeric, cinnamon, and cardamom with tender chicken. Ingredients
- Chicken drumsticks – 500 g / 1 lb
- Jasmine rice – 2 cups / 400 g
- Coconut milk – 1 cup / 240 ml
- Water – 1 1/2 cups / 360 ml
- Turmeric powder – 1 tablespoon
- Ground cardamom – 1 teaspoon
- Cinnamon stick – 1 stick
- Bay leaf – 1 leaf
- Onion, thinly sliced – 1 large
- Ginger, minced – 1 tablespoon
- Garlic, minced – 1 tablespoon
- Fish sauce – 2 tablespoons
- Vegetable oil – 2 tablespoons
- Cilantro, for garnish – A handful
- Lime wedges – For serving
Instructions
- In a large bowl, marinate the chicken with turmeric, ground cardamom, minced ginger, garlic, and fish sauce. Set aside for at least 30 minutes.
- Rinse the jasmine rice under cold water until the water runs clear. Drain well.
- In a large pot over medium heat, add vegetable oil and sauté the sliced onions until golden brown.
- Add the marinated chicken and sear on all sides until golden.
- Add cinnamon stick, bay leaf, coconut milk, and water to the pot. Bring to a simmer.
- Stir in the rice, ensuring it’s evenly distributed in the liquid.
- Cover the pot, reduce the heat to low, and cook for 25 minutes or until the rice is tender and the liquid is absorbed.
- Turn off the heat and let the pot sit covered for an additional 10 minutes.
- Fluff the rice gently with a fork and serve with a garnish of cilantro and lime wedges.
