This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Kestaneli Baklava is a sumptuous pastry originating from the rich culinary heritage of Turkiye. Infusing the traditional multilayered and syrup-soaked approach of classic baklava with the unique nutty sweetness of chestnuts, this variation celebrates the harmony between distinct textures and flavors, elevating a beloved dessert to new heights. Often prepared during festive occasions, Kestaneli Baklava combines the buttery flakiness of filo pastry with the earthy, roasted notes of chestnuts, resulting in a sophisticated treat that hails from Anatolia, where chestnut trees grow plentifully.

Ingredients

  • phyllo dough – 16 sheets
  • unsalted butter – 1 cup / 225 g, melted
  • sugar – 1 and 1/2 cups / 300 g
  • water – 3/4 cup / 180 ml
  • lemon juice – 1 tablespoon / 15 ml
  • chestnuts – 2 cups / 240 g, boiled and peeled
  • walnuts – 1 cup / 120 g, finely chopped
  • cinnamon – 1 teaspoon / 2 g

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brush a 9×13 inch (23×33 cm) baking dish with melted butter.
  3. Layer 8 sheets of phyllo dough, brushing each with melted butter before adding the next.
  4. Mix chestnuts, walnuts, and cinnamon together, then spread evenly over the layered phyllo dough.
  5. Layer the remaining 8 sheets of phyllo on top, again brushing each sheet with butter.
  6. Cut the unbaked baklava into diamond shapes.
  7. Bake in the preheated oven for 30-35 minutes or until golden brown.
  8. While baking, prepare the syrup by simmering sugar, water, and lemon juice until sugar dissolves.
  9. Once baklava is baked, pour the syrup evenly over the baklava while it’s still hot.
  10. Allow to soak for at least 4 hours before serving, ideally overnight.
