Kesra is a traditional Algerian flatbread, revered for its simplicity and its ability to perfectly accompany tagines, stews, or simply a bowl of olive oil and herbs. Ingredients

  • fine semolina – 3 cups / 450 g
  • all-purpose flour – 1 cup / 130 g
  • olive oil – 1/4 cup / 60 ml
  • warm water – 1 1/2 cups / 360 ml
  • salt – 1 tsp / 5 g
  • baking powder – 1 tsp / 5 g

Instructions

  1. In a large mixing bowl, combine the semolina, flour, salt, and baking powder.
  2. Gradually add the olive oil to the dry ingredients, mixing with your fingers until the mixture resembles breadcrumbs.
  3. Slowly pour in the warm water while kneading the dough until it becomes soft and pliable.
  4. Divide the dough into two equal parts and roll each piece into a flat circle about 1/2 inch thick.
  5. Heat a large, heavy skillet or griddle over medium heat. Cook each piece of dough for about 5-7 minutes on each side until golden brown and cooked through.
  6. Remove from heat and allow to cool slightly before cutting into wedges and serving.
