Ingredients
- water – 3 cups / 720 ml
- new potatoes – 4 small, diced
- carrots – 2, sliced
- cauliflower – 1/2 head, cut into florets
- green beans – 100 g / 3.5 oz, trimmed
- peas – 1 cup / 150 g, fresh or frozen
- whole milk – 2 cups / 480 ml
- butter – 2 tablespoons / 30 g
- all-purpose flour – 2 tablespoons / 16 g
- salt – 1 teaspoon
- white pepper – 1/4 teaspoon
- fresh dill – 2 tablespoons, chopped
Instructions
- Bring water to a boil in a large pot. Add diced potatoes and sliced carrots; cook for 5 minutes.
- Add cauliflower florets and green beans to the pot; simmer for another 5 minutes.
- Stir in peas and continue to cook until all vegetables are tender.
- In a separate saucepan, melt butter over medium heat. Stir in flour to make a roux, cooking until bubbly.
- Gradually whisk in milk until smooth. Simmer until thickened, stirring frequently.
- Pour the milk mixture into the vegetable pot, stirring gently to combine.
- Season with salt and white pepper, then add fresh dill for flavor.
- Serve immediately, garnished with additional dill if desired.
