Originally crafted by simmering leftovers within cheese rinds, it has evolved into a beloved comfort food, symbolizing resourcefulness and indulgence.

Ingredients

  • Edam cheese – 2-3 medium-sized rounds (about 500 g each)
  • Chicken (cooked and shredded) – 600 g / 1.3 lbs
  • Red bell pepper – 1, diced
  • Green olives – 120 g / 1 cup, sliced
  • Tomato paste – 3 tbsp
  • Onion – 1 large, chopped
  • Garlic – 4 cloves, minced
  • Raisins – 60 g / 1/2 cup
  • Capers – 2 tbsp
  • Dried thyme – 1 tsp
  • Bread crumbs – 50 g / 1/2 cup
  • Vegetable oil – 2 tbsp
  • Salt and pepper – to taste

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Carefully hollow out the Edam cheeses to create a shell, reserving the cheese from the interior.
  3. In a pan, heat oil over medium heat and sauté onions and garlic until fragrant.
  4. Add bell pepper, olives, tomato paste, raisins, capers, and thyme, cooking until softened.
  5. Stir in cooked chicken, season with salt and pepper, and let the mixture combine well.
  6. Mix in bread crumbs and some of the reserved cheese until a cohesive filling forms.
  7. Stuff the cheese shells with the filling, and cover them with remaining Edam slices.
  8. Place the stuffed cheese in the oven and bake for 30-40 minutes until the top is golden and bubbly.
  9. Allow to cool slightly before serving.
