Ingredients

  • fresh chervil – 1 cup / 25 g
  • butter – 2 tbsp / 30 g
  • onion, finely chopped – 1 medium / 150 g
  • all-purpose flour – 2 tbsp / 15 g
  • chicken or vegetable stock – 4 cups / 960 ml
  • heavy cream – 1 cup / 240 ml
  • salt – to taste
  • pepper – to taste
  • lemon juice – 1 tbsp / 15 ml

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the flour to form a roux, cooking for about 2 minutes.
  4. Gradually whisk in the stock, ensuring there are no lumps.
  5. Bring the mixture to a simmer, then reduce heat and cook for 10 minutes.
  6. Add the chervil and cook for another 5 minutes.
  7. Blend the soup until smooth, using a stick blender or by transferring to a blender.
  8. Stir in the cream, season with salt, pepper, and lemon juice to taste.
  9. Heat through gently, but do not boil.
  10. Serve hot, garnished with extra chervil.
