Ingredients
- lamb head and trotters – 1 each / approx. 2 kg
- onion – 1 large, chopped
- garlic – 4 cloves, minced
- lemon – 1, juiced
- white vinegar – 2 tablespoons
- salt – 2 teaspoons
- black pepper – 1 teaspoon
- red pepper flakes – 1 teaspoon
- water – 3 liters
- fresh parsley – 1/4 cup, chopped
Instructions
- Thoroughly clean the lamb head and trotters, removing any hair. Soak them in cold water with vinegar for 30 minutes to cleanse.
- In a large pot, combine the lamb head, trotters, chopped onion, garlic, and water.
- Bring to a boil over medium-high heat, then reduce to a simmer.
- Simmer gently for 3-4 hours, skimming off any foam that forms on the surface.
- Remove the head and trotters; when cool enough to handle, remove meat and set aside.
- Strain the broth to remove any solids and return it to the pot.
- Add salt, pepper, and red pepper flakes to the broth and stir well.
- Return the meat to the pot and heat through.
- Stir in lemon juice before serving.
- Garnish each bowl with fresh parsley before serving.
