Kå’du fanihi is a traditional Chamorro delicacy from Guam, steeped deeply in the island’s rich cultural history. Ingredients
- chicken thighs – 4 pcs / about 600 g
- coconut milk – 2 cups / 480 ml
- large onion – 1, diced
- garlic cloves – 4, minced
- ginger – 2 inches, sliced
- lemongrass stalk – 1, crushed
- spinach leaves – 2 cups / about 60 g
- chicken broth – 4 cups / 960 ml
- salt – to taste
- black pepper – to taste
- green onions – 2, chopped
- soy sauce – 2 tbsp / 30 ml
Instructions
- Heat a large pot over medium heat and add the chicken thighs. Brown them on both sides for about 5 minutes.
- Add the diced onion, minced garlic, sliced ginger, and crushed lemongrass to the pot. Sauté until the onions are translucent.
- Pour in the chicken broth and bring to a boil. Reduce to a simmer and cook for 20 minutes, allowing the flavors to meld.
- Remove the chicken thighs, shred the meat, and return it to the pot.
- Stir in the coconut milk and spinach leaves. Cook for another 5 minutes.
- Season with salt, black pepper, and soy sauce. Adjust seasoning to taste.
- Garnish with chopped green onions before serving.
