Katong Laksa is a soulful dish that hails from the vibrant city-state of Singapore. Ingredients

  • dried rice vermicelli – 200 g / 7 oz
  • shrimp – 300 g / 10.5 oz, peeled and deveined
  • coconut milk – 400 ml / 13.5 fl oz
  • chicken stock – 500 ml / 17 fl oz
  • laksa paste – 150 g / 5.3 oz
  • bean sprouts – 100 g / 3.5 oz
  • fish cake – 100 g / 3.5 oz, sliced
  • fresh coriander – A handful, chopped
  • lime – 1, cut into wedges
  • fresh red chilies – 2, sliced
  • salt – to taste
  • sugar – 1 tsp

Instructions

  1. Cook the rice vermicelli according to package instructions, then rinse in cold water and set aside.
  2. In a large pot, heat the laksa paste over medium heat until fragrant, about 2-3 minutes.
  3. Add coconut milk and chicken stock to the pot, stirring well to combine. Bring to a simmer.
  4. Add the fish cake slices and shrimp, cooking until the shrimp are pink and opaque, about 3-4 minutes.
  5. Add the bean sprouts and sugar. Season with salt to taste.
  6. Divide the cooked vermicelli among bowls and ladle the hot soup over the top.
  7. Garnish with fresh coriander, sliced red chilies, and serve with lime wedges.
