Karuveppilai Sadam, or Curry Leaf Rice, is a fragrant rice dish hailing from the southern parts of India. Ingredients

  • cooked rice – 4 cups / 800 g
  • curry leaves – 1 cup / 25 g
  • ginger – 1 inch / 10 g, chopped
  • green chilies – 2, slit
  • urad dal – 2 tbsp / 30 g
  • chana dal – 2 tbsp / 30 g
  • mustard seeds – 1 tsp / 5 g
  • asafoetida – a pinch
  • turmeric powder – 1/2 tsp / 2 g
  • salt – to taste
  • sesame oil – 3 tbsp / 45 ml

Instructions

  1. Heat sesame oil in a large pan over medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add urad dal and chana dal, sauté until they turn golden brown.
  4. Add asafoetida, slit green chilies, chopped ginger, and curry leaves. Stir fry until fragrant.
  5. Add turmeric powder and salt, mix well.
  6. Add the cooked rice to the pan and gently mix until the rice is well coated with the spice mixture.
  7. Remove from heat and serve warm.

Substitutions

  • sesame oil -> coconut oil
  • urad dal -> split yellow peas
