Karukan, a renowned Japanese sweet bread, hails from the southern region of Kyushu. Made from a delightful blend of yam and rice flour, this lightly sweetened treat first appeared in the Edo period as a luxurious delicacy served to nobility. Its pillowy texture and gentle sweetness have made it a beloved staple in Japanese confectionery, merging the earthiness of yams with the simplicity of rice flour.

Ingredients

  • Yam flour – 1 cup / 100 g
  • Rice flour – 1 cup / 120 g
  • Sugar – 1 cup / 200 g
  • Water – 1 1/4 cup / 300 ml

Instructions

  1. Preheat your steamer by bringing water to a boil.
  2. In a mixing bowl, combine yam flour and rice flour.
  3. Gradually add sugar to the flour mixture, stirring until thoroughly combined.
  4. Slowly incorporate water into the mixture, continuing to stir until smooth.
  5. Pour the batter into a greased loaf pan.
  6. Steam for 40-45 minutes, or until a skewer inserted comes out clean.
  7. Let cool slightly before removing from the pan. Slice and serve.
