Ingredients

  • karimeen (pearl spot fish) – 4 whole fish, cleaned and gutted
  • tamarind paste – 2 tablespoons
  • coconut oil – 4 tablespoons
  • shallots – 1 cup / 150 g, finely sliced
  • ginger-garlic paste – 2 tablespoons
  • green chili – 2, slit
  • curry leaves – 2 sprigs
  • turmeric powder – 1 teaspoon
  • red chili powder – 2 teaspoons
  • garam masala – 1 teaspoon
  • salt – to taste
  • banana leaves – 4 large pieces, washed
  • lemon wedges – for serving

Instructions

  1. In a bowl, mix tamarind paste, turmeric powder, red chili powder, garam masala, and salt to create a thick paste.
  2. Gently cut slits on the fish and apply the spice paste evenly all over.
  3. Heat coconut oil in a pan and sauté shallots, ginger-garlic paste, green chili, and curry leaves until golden brown.
  4. Place each fish on a banana leaf, top it with the sautéed mixture, and wrap tightly.
  5. Steam the wrapped fish for 20-25 minutes until cooked through.
  6. Serve hot with lemon wedges.
