Ingredients
- chicken pieces – 1 kg / 2.2 lbs
- coconut milk – 2 cups / 480 ml
- onions, chopped – 2 medium / 300 g
- garlic, minced – 4 cloves / 20 g
- ginger, minced – 2 tbsp / 30 g
- curry powder – 3 tbsp / 22 g
- turmeric powder – 1 tsp / 5 g
- cumin powder – 1 tsp / 5 g
- coriander powder – 1 tsp / 5 g
- cinnamon stick – 1 piece
- star anise – 1 piece
- cardamom pods – 3 pods
- potatoes, peeled and quartered – 2 large / 400 g
- salt – to taste
- vegetable oil – 3 tbsp / 45 ml
- water – 1 cup / 240 ml
Instructions
- Heat oil in a large pot over medium heat.
- Add chopped onions, garlic, and ginger, stirring until fragrant and golden.
- Mix in curry powder, turmeric, cumin, and coriander, cooking for another minute until spices release their aroma.
- Add chicken pieces, stirring to coat them in the spice mixture.
- Pour in the coconut milk and water, bringing the mixture to a boil.
- Add cinnamon stick, star anise, and cardamom pods, then reduce heat to simmer.
- Add potatoes, and cook until both potatoes and chicken are tender (about 30-40 minutes).
- Season with salt to taste and serve hot with steamed rice or bread.
Substitutions
- coconut milk -> almond milk with a dash of coconut extract
- chicken -> tofu or chickpeas for a vegetarian version
- curry powder -> homemade blend of ground coriander, cumin, and chili powder
