Ingredients

  • Pork ribs – 2 racks / approximately 4-5 lbs
  • Brisket – 4 lbs
  • Chicken thighs – 8 pieces
  • Kansas City-style BBQ sauce – 2 cups / 480 ml
  • Brown sugar – 1/2 cup / 100 g
  • Paprika – 2 tbsp / 15 g
  • Salt – 1 tbsp / 15 g
  • Black pepper – 1 tbsp / 15 g
  • Onion powder – 1 tbsp / 8 g
  • Garlic powder – 1 tbsp / 10 g
  • Cayenne pepper – 1 tsp / 2 g
  • Apple cider vinegar – 1/2 cup / 120 ml
  • Wood chips (hickory or mesquite) – 3 cups / 720 ml

Instructions

  1. Soak wood chips in water for at least 30 minutes before grilling.
  2. Preheat the smoker to 225°F (107°C).
  3. In a bowl, mix brown sugar, paprika, salt, black pepper, onion powder, garlic powder, and cayenne pepper.
  4. Rub the mixture thoroughly over the ribs, brisket, and chicken thighs.
  5. Place the meats in the smoker and cook low and slow. Ribs should be smoked for 3-4 hours, brisket for 8-10 hours, and chicken thighs for 1-2 hours.
  6. Baste the meats with Kansas City-style BBQ sauce during the final hour of smoking.
  7. Allow meats to rest for 10 minutes before slicing and serving.
