Ingredients

  • beef chuck – 2 lbs / 900 g, cubed
  • all-purpose flour – 1/4 cup / 30 g
  • unsalted butter – 2 tablespoons / 28 g
  • yellow onion – 2 medium, sliced
  • carrots – 3 large, chopped
  • beef broth – 4 cups / 960 ml
  • bay leaves – 2
  • whole allspice berries – 10
  • salt – to taste
  • black pepper – to taste
  • parsley – fresh, for garnish

Instructions

  1. Pat the beef cubes dry and season with salt and pepper.
  2. Dredge the beef in flour, shaking off excess.
  3. In a large pot, melt butter over medium heat. Brown the beef in batches, setting aside when browned.
  4. In the same pot, add onions and carrots. Sauté until onions are translucent.
  5. Return beef to the pot. Add beef broth, bay leaves, and allspice.
  6. Bring to a simmer, cover, and cook on low heat for 2 hours or until beef is tender.
  7. Adjust seasoning with more salt and pepper if needed. Discard bay leaves and allspice before serving.
  8. Garnish with fresh parsley. Serve hot.
