Kalatusha is a traditional Ukrainian soup that exemplifies the rich culinary traditions of Eastern Europe. Ingredients
- beets – 2 large / 400 g
- potatoes – 2 medium / 300 g
- carrots – 2 medium / 150 g
- onion – 1 large / 150 g
- garlic – 2 cloves
- vegetable broth – 1.5 liters / 6 cups
- apple cider vinegar – 2 tablespoons
- fresh dill – 2 tablespoons, chopped
- salt – to taste
- black pepper – to taste
- sunflower oil – 2 tablespoons
Instructions
- Wash and peel beets, potatoes, and carrots. Julienne the beets, dice the potatoes, and slice the carrots.
- Chop the onion finely and mince the garlic.
- In a large pot, heat sunflower oil over medium heat. Sauté the onion until translucent, about 5 minutes.
- Add the garlic and cook for another minute until fragrant.
- Add the beets, carrots, and potatoes to the pot and pour in the vegetable broth.
- Bring to a boil, then reduce the heat and simmer for 20-30 minutes or until the vegetables are tender.
- Stir in the apple cider vinegar, salt, and black pepper. Adjust seasoning to taste.
- Garnish with fresh dill before serving.
