Kalamar Tava is a cherished seafood dish that hails from the vibrant coastal regions of Turkiye. This Turkish classic features tender calamari rings fried to golden perfection, delivering a delightful contrast between the crispy exterior and succulent interior. Traditionally served with a zesty garlic and lemon sauce, Kalamar Tava captures the essence of Mediterranean cuisine with its simplicity and rich flavor, bringing to the table the exuberant spirit of the Aegean Sea.

Ingredients

  • calamari rings – 500 g / 1.1 lbs
  • all-purpose flour – 1 cup / 120 g
  • cornstarch – 1/4 cup / 30 g
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • vegetable oil – for frying
  • lemon wedges – for serving
  • garlic cloves – 2, minced
  • fresh parsley – 2 tbsp, chopped

Instructions

  1. 1. Pat the calamari rings dry with paper towels to remove excess moisture.
  2. 2. In a bowl, combine the flour, cornstarch, salt, and black pepper.
  3. 3. Dredge the calamari rings in the flour mixture, ensuring they are well-coated.
  4. 4. Heat vegetable oil in a frying pan over medium-high heat. The oil should be deep enough to submerge the calamari partially.
  5. 5. Fry the calamari rings in batches for 2-3 minutes or until golden brown. Avoid overcrowding the pan.
  6. 6. Remove the fried calamari using a slotted spoon and drain on paper towels.
  7. 7. Mix minced garlic and chopped parsley. Serve the calamari hot with a side of lemon wedges and garlic-parsley mix.

Substitutions

  • calamari rings -> squid rings
  • all-purpose flour -> rice flour for gluten-free
  • vegetable oil -> canola oil

Enhancements in the Next Evolution

  • Add a pinch of paprika to the flour mixture for a hint of heat.
  • Use sparkling water instead of still water for a lighter, crisper texture in the batter.
  • Incorporate lemon zest into the garlic-parsley mix for enhanced citrus flavor.
