Kakori Kebab, a treasured delicacy from the Awadhi cuisine of India, traces its origins back to the small town of Kakori near Lucknow. This succulent and tender kebab was originally created for the Nawabs who preferred refined and melt-in-the-mouth textures in their meats. Perfected using a meticulous blend of spices and the finest meat, this dish embodies the rich culinary traditions of the region.
Ingredients
- lamb mince – 500 g / 1.1 lbs
- raw papaya paste – 2 tbsp / 30 g
- onion – 1 large, grated
- ginger garlic paste – 1 tbsp / 15 g
- coriander powder – 1 tsp / 2 g
- cumin powder – 1 tsp / 2 g
- garam masala – 1 tsp / 2 g
- red chili powder – 1 tsp / 2 g
- salt – to taste
- ghee – 3 tbsp / 45 g
- rose water – 1 tsp / 5 ml
- saffron strands – a pinch, soaked in 2 tbsp warm milk
Instructions
- In a large bowl, combine lamb mince, raw papaya paste, grated onion, ginger garlic paste, and spices.
- Mix well and let it marinate for at least 2 hours in the refrigerator.
- Add ghee, rose water, and saffron milk to the marinated meat and mix until fully incorporated.
- Shape the mixture onto skewers in a cylindrical form.
- Grill the kebabs on medium heat, basting occasionally with ghee, until cooked through and golden brown.
- Serve hot with mint chutney and sliced onion rings.
